The History of Home Canning and What Safety Requires Today

Direct answer. Canning preserves food by sealing it and heating it enough to stop spoilage. High-acid foods such as most fruits, jams, and pickles can use a boiling-water bath. Low-acid foods such as vegetables and meats must use a pressure canner that reaches about 240 F. Follow tested current recipes from the USDA or the National Center for Home Food Preservation, and never improvise times or methods.

Canning preserves food by sealing it in a container and heating it enough to stop spoilage. Nicolas Appert developed a working method in France and received a prize for it in 1810. Home canning became practical after John Landis Mason patented his screw-top glass jar in 1858. For much of that history, people canned successfully without understanding the biology behind it. Today we do understand it, and that understanding comes with rules that must be followed exactly.

What changed

Appert sealed food in glass, closed it with cork and wax, and heated it in boiling water. He did not know why it worked. Microorganisms and spoilage science came decades later. Mason's 1858 jar, with a threaded neck and screw cap over a rubber seal, made a reliable airtight closure available to ordinary households.

Twentieth-century science identified Clostridium botulinum. Its spores can survive ordinary boiling and, in a sealed low-acid jar without oxygen, can produce the toxin that causes botulism. That fact reshaped safe canning. High-acid foods create an environment that prevents toxin production, so they can be processed at boiling-water temperature. Low-acid foods need heat well above boiling, about 240 F, which only a pressure canner can reach by trapping steam. Nineteenth-century households canned without this knowledge. Some of their shortcuts were unsafe even when people usually got away with them.

Historical Notes

Start with high-acid projects such as jams, pickles, and fruits, using a boiling-water bath and a tested recipe. That is the safest entry point. If you want to can vegetables or meats, use a proper pressure canner and learn its dial or weighted gauge. Get recipes and processing times from the USDA Complete Guide to Home Canning or the National Center for Home Food Preservation, and follow them exactly for the food you are putting up. Mark jars with contents and date, store them cool and dark, and build skill one tested product at a time. Home canning remains a rewarding way to preserve a harvest when current rules lead the work.
